pi phi salad circa 2003.

I LOVE honey mustard, but since moving to Australia I haven't been able to find one that really does the trick. After feeling a bit homesick the other day, I decided to recreate an old favourite- a Pi Phi salad bar salad WITH creamy honey mustard.  I enjoyed it so much that I had a salad for 5 meals in a row (including breakfast- don't judge!).
This recipe isn't exactly perfect yet, but this is what I have so far.

Just made my own version of a pi phi salad bar salad... Circa 2003 :)

Creamy Honey Mustard Salad Dressing:
  • 1 cup light whole egg mayo
  • 3 tablespoons honey
  • 2 tablespoon yellow mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice 
Tip 1: it tastes WAY better if you let it sit overnight.
Tip 2: if you love HM as much as I do, you might as well double the recipe so that you always have it on hand. Just saying....

In the salad:
  • spinach
  • tomato
  • red onion
  • avocado
  • feta
  • cottage cheese
  • toasted pie nuts and/or almonds
  • crushed garlic bagel chips
  • craisins
