I love the combination of tomato and basil. In a salad. On a stick. Baked on to a cracker. Simmered in to a soup... Just love it!
I made caprese salad sticks last year for Thomas' surprise party and decided to change it up a bit this time when I found this idea on Pinterest.

Same ingredients... different shape :)
What you need:
- Fresh Basil
- Two containers of Cherry Tomatoes
- Mini Bocconcini (what I would refer to as buffalo mozzarella back in the states)
- Balsamic Vinaigrette Salad Dressing

Wash and cut the tops off of your cherry tomatoes. Gently squeeze out the seeds and juice in to a seperate bowl.

Rip basil leaves in to smaller pieces and cut mini bocconicni in to quarters. Assemble- tomato, basil, cheese!

Drizzle dressing over the top...

and ENJOY!

The only fault I have for these little guys is that they don't really stand up straight once you get a bunch of them on a platter. I decided to use this smaller round dish so I could squish them all in so they wouldn't fall over. It worked perfectly and they were very yummy!
I can't wait to make these with my garden basil!
