salsa- yum o.

One of my co-workers brought in this amazing salsa the other day and I just have to share the recipe! I know she brought it in for everyone to try but I loved it so much I had an entire plate full- it was quite embarrassing actually, haha.


The key players:
  • one red onion
  • two tomatoes
  • two avocados
  • one chilli
  • one lime
  • salt and peper 
  • olive oil
  • corn chips

Start by dicing your red onion very finely.

Next, cut your tomatoes into quarters and removed the pulp.

Finely dice your tomatoes.

Cut the chilli in half and remove the seeds- unless you like things REALLY hot... then leave the seeds.  Also, I would recommend either washing your hands really well after this step or make sure you remove the seeds with a knife. Either way, never accidentally rub your eyes- I did and my right eye went numb for about 30 minutes.  Lesson learned.

Finely dice your chilli and combine in a bowl with your onion and tomato.

In a separate bowl, squeeze the juice of half a lime. I had a really small lime so I used the juice of the whole lime.

After squeezing the juice out into a smaller bowl, use a spoon to removed the pulp from 1/2 a lime and combine with your tomato, onion and chilli mixture. Again, I used the whole lime because mine was very small.

Dice two avocados (hint: don't use over ripe or really soft avocados because your salsa will just turn in to a mushy mess!).

After all of your ingredients are combined, pour your lime juice over the top. This will help to keep your avocados from going brown and add a really great taste to the mix.

Finally add salt and pepper to taste and a table spoon (or so) of olive oil.

And there you have it friends- chunky tomato and avocado salsa. A little taste of heaven if you ask me!! Enjoy :)
